Head Chef Karl Jóhann Unnarsson creates seasonal dishes that reflect the restaurant’s Modern Nordic philosophy. “Within our à la carte menus we use the freshest seasonal ingredients, yet we prepare these in interesting ways using modern techniques and cooking methods. We like to combine contrasting ingredients that speak for themselves and then present these in simple, yet well executed forms. For example, our menu features cured salmon with trout roe and dill oil, smoked puffin with beer bread and pickled beetroot, cured goose with Icelandic Cheddar cheese and wild lamb with mushroom purée and redcurrant glaze. All of these have classic Icelandic roots yet are prepared and presented in a fresh and contemporary Modern Nordic style”.
At the Ranga Restaurant the menus include the very freshest locally sourced products wherever possible. Fresh fish are delivered daily from the Southern Icelandic Coast, free-range organic lamb is reared on the volcanic hillsides nearby and tomatoes are harvested from the geo-thermally heated greenhouses at Fridheimar.
