Simple Yet Delicious Recipe for a Turkey Crown

Ingredients

1 turkey crown (approximately 2 – 3 kg)

2 – 3 tablespoons softened butter or olive oil

Salt and pepper to taste

Herbs (rosemary, thyme, sage) for seasoning

2 onions, quartered.

2 – 3 carrots, roughly choppe

2 – 3 celery sticks, roughly chopped

4 – 5 garlic cloves, smashed

500ml chicken or vegetable stock

Optional: Cranberry sauce or gravy for serving

Instructions:

Prepare the Turkey Crown

Preheat your oven to 180°C (350°F).

Pat the turkey crown dry with paper towels. Place it on a clean surface.

Carefully loosen the skin from the meat by gently sliding your fingers under the skin. Be cautious not to tear the skin.

Season the Turkey

Rub softened butter or olive oil all over the turkey crown, including underneath the skin. Season generously with salt, pepper, and your choice of herbs, ensuring the seasoning reaches under the skin.

Prepare the Roasting Pan

In a roasting pan, create a bed of onions, carrots, celery, and smashed garlic cloves. Place the seasoned turkey crown on top of this vegetable mixture.

Roasting the Turkey

Pour the chicken or vegetable stock into the roasting pan around the turkey crown. This will keep the meat moist and flavorful.

Cover the turkey crown loosely with foil and place it in the preheated oven.

Roast for about 20 minutes per 500g of meat, removing the foil for the last 30 – 40 minutes to allow the skin to crisp up and turn golden brown.

Checking Doneness

To check if the turkey crown is cooked, insert a meat thermometer into the thickest part of the meat. It should read at least 75°C (165°F).

Once cooked, remove the turkey crown from the oven and let it rest for 20 – 30 minutes before carving.

Serving

Carve the turkey crown into slices and serve with your choice of sides, cranberry sauce, or gravy.
